This blog will be all about my favorite dessert recipes and my first entry will be the CUSTAROONS! I got this recipe from a cousin of mine who is a good friend of Gigi Gaerlan, the creator of the Custaroons. THIS is the ORIGINAL RECIPE! Enjoy!!!

THE ORIGINAL Custaroons Recipe of Gigi Gaerlan
Crank up oven to 375 degrees
Line cupcake pans with cupcake liners
Ingredients:
1 cup margarine (not butter)
1/2 cup white sugar
1/4 tsp salt
7 large eggs
1 1/4 cups grated cassava
1 1/4 cups dried coconut
1 teaspoon corn starch (don't go over this measurement)
2 cups coconut milk (I use the canned milk)
2 cups condenseda (according to her, this is different from condensed milk)
1/4 tsp of lemon flavoring
Procedure:
Beat margarine until very light yellow (about 4 minutes)
Mix in sugar and salt and beat again for about 1 minute
Beat in eggs 1 at a time. Mix until fully incorporated (you will notice some lumps but don't worry, this is normal)
Add coconut and cassava and mix for another 3 minutes
Add condensada and coconut milk and mix thoroughly
mix in corn starch
Add 1/4 teaspoon lemon flavoring
Pour into cupcake cups and bake at 375 for 35-45 minutes.
Let cook before taking them off the cupcake trays.
